Kadhai Paneer is a popular Indian dish made with paneer (Indian cottage cheese), bell peppers, onions, and a blend of aromatic spices. It's typically cooked in a kadhai (Indian wok), which gives the dish its name. Here's a recipe to help you make Kadhai Paneer:
Ingredients:
- 250 grams paneer, cut into cubes
- 1 large onion, finely chopped
- 1 medium-sized green bell pepper, cut into strips
- 1 medium-sized red bell pepper, cut into strips
- 2-3 medium-sized tomatoes, finely chopped
- 2-3 green chilies, slit lengthwise (adjust according to your spice preference)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds, coarsely crushed
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon dried fenugreek leaves (kasuri methi)
- 2 tablespoons oil or ghee (clarified butter)
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions:
1. Heat oil or ghee in a kadhai or a deep skillet over medium heat.
2. Add cumin seeds and let them splutter. Then add the chopped onions and sauté until they turn translucent.
3. Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
4. Add the chopped tomatoes and green chilies. Cook until the tomatoes turn soft and mushy.
5. Add the crushed coriander seeds, red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes.
6. Add the bell peppers and cook for 2-3 minutes until they are slightly softened but still retain their crunch.
7. Now, add the paneer cubes and mix gently to coat them with the masala. Be careful not to break the paneer cubes.
8. Sprinkle garam masala and dried fenugreek leaves (kasuri methi) over the paneer and mix well.
9. Cover the kadhai and cook for another 4-5 minutes on low heat to allow the flavors to meld together.
10. Finally, garnish with fresh coriander leaves and remove from heat.
11. Serve hot with roti, naan, or steamed rice.
